Most restaurants that serve duck over rice only sprinkle a little bit of duck meat over minced pork. But the owner of an unnamed restaurant in Kaohsiung’s Gushan District wants to make sure the students at nearby National Sun Yat-sen University are well fed, piling her bowls of duck rice high with cabbage. She serves from a cramped walkway attached to a residential building. It’s always packed with students, who know to go in from the side entrance to find a seat.
With deft hands, the owner cuts a duck in half and then into delicious pieces. But the dish isn’t complete without this.
She mixes a bowl of cabbage to spread out the seasoning. Apart from fragrant minced pork, this serving of duck over rice also comes with a generous helping of sides. It’s how the owner shows her care for the students who come to her for a meal.
Owner
Since students say they’ll only be full after having a complete meal, I add more to it so it’ll be like a full lunch with side dishes.
Customer
I’ve been coming here since I was a student. It’s been five or six years now.
This unnamed food stall in Kaohsiung’s Gushan District is on a covered walkway. But don’t be fooled by the two small tables out front. If you go inside, the former residential space opens into a whole other world. Students gather here to fill up on good food.
Customer
The duck arrives fresh daily, so it’s always delicious. Students love coming here.
Owner
There are limited amounts of things like pork knuckle. I cook with my heart, using only real ingredients. The soup is made with stock, stock from the duck. It’s fresh. If it’s fresh, it’ll taste good.
Apart from duck over rice, customers also love all the typical braised fare. Although only an anonymous food stall, the owner’s bowls of duck rice made with a mother’s touch is an open secret among students.
