A fried chicken skin stand in Tainan stays open all night, even when no one is running it. Customers take what they want and pay by themselves, enjoying delicious, crispy fried chicken skin even in the middle of the night. The owner said customers would come even after he ended his shift, so he started preparing more and more food.

A passerby saw someone buying chicken skin from a stand in the middle of the night, but there was no sign of the owner. It turns out he had already left for the night.

At first it was just because some customers would come later, so I left a few servings out for them to take by themselves. I found that more customers were choosing to come at that time, so I started putting out more and more.

The chicken skin is fried in boiling oil until it’s golden and crispy, and then seasoned to finish it off. This stand in Tainan is open from 4pm to 1am, with the owner frying chicken skin on the spot. But after 1am, it becomes a self-service shop where customers take food and leave money.

By trusting customers to serve and pay themselves, the stand gets business even when its owner is asleep.
