One stand at Taoyuan’s Bade Xingren Night Market has reimagined Taiwan’s iconic stinky tofu in all-new flavors. The owner makes salted egg stinky tofu, which has becoming popular for its unique taste and texture. Although he’s successful now, he struggled earning enough to pay rent when first starting the business.

Oil sizzles as a chef deep-fries stinky tofu until it’s a light golden-brown.

To make the sauce, he combines garlic powder with egg yolk, mixing them under heat until it foams. The sauce is poured onto the stinky tofu and topped with egg whites and spring onions, giving the iconic Taiwanese dish an all-new flavor.

People can’t stop raving about this salted egg stinky tofu from Taoyuan’s Bade Xingren Night Market. The owner of the stand, Lee Shih-wei李世偉, reimagined this traditional dish in his own unique way.

I hit a roadblock when I was working in insurance, so I thought I’d give this a try. At first, I had salty and sweet flavors and also offered a condensed milk flavor. But at that time, I couldn’t even sell one serving a day.

People didn’t seem to like Lee’s stinky tofu flavors at first. He didn’t even earn enough to pay rent the first month. But it’s a good thing he didn’t give up.

Egg yolk burns very easily if it gets too hot. So, I had to try lots of times at first, and it would often turn black instead of golden, because I didn’t understand. Then I did some research on Google about how to do it and started practicing. As I got more familiar with it, it started looking better and better. Then customers started thinking it pairs well with stinky tofu, and the stand started getting more popular.

In addition to salted egg yolk stinky tofu, he now offers Thai sweet and spicy, roasted cheese roe, and other unique flavors. Lee has reimagined stinky tofu, giving the classic dish a whole new identity.
